In Fall of 2014, Privy and Chase produced PERFECT PAIRS, a trio of bespoke culinary experiences for Privy members and Chase private clients in Los Angeles, New York and San Francisco to test the common perception that it’s challenging, even downright impossible, to pair wines with Chinese cuisine.
PERFECT PAIRS LA - October 11, 2014
PERFECT PAIRS NY - November 5, 2014
PERFECT PAIRS SF - November 12, 2014
A collaboration between the chef and sommelier, each 100-person wine dinner uniquely featured a precision pairing of different Chinese cuisine and wines from around the world. Combining delicious light plates of seafood or poultry with a finely-textured Champagne, heavier duck or beef dishes with a savory, layered European red, and game or heavier recipes with refreshing Pinot Noirs or Burgundies, resulted in rave reviews for every course presented at each of the dinners.
In the final analysis, Chinese cuisine and wine really do make exquisite pairings -- when done right.
