This fine dining establishment recently underwent a few nips and tucks although the changes are so discrete so as to not be immediately apparent. Do however make a reservation, as new chef Gavin Kaysen is being put through his paces by Daniel Boulud's public. Take a detour to foreign kitchens under these masterful influences and dignified constancy. Bluefin tuna, inspired by Brittany, roasted duck breast inspired by Italy and feathery, foam lightened mushroom soup. This NY hot spot, if somewhat cramped for space, is marked by Michelin and frequented by rich and famous fans such as Mick Jagger. So while you are in town, get your judicious dose of French freshness, originality and presentation at Café Boulud.
