This two story eatery is not just blowing smoke it deliberately planned evokes memories of central Texas BBQ markets. Brick wall décor covered with images of lonely country roads and battered pick-up trucks convey this culture. Tables are rough hewn and rolls of paper towels complete the picture. Hill Country dispenses huge hunks of meat, chicken and sausage, and is modeled on the Kreuz Market -Texas. The house specialty is brisket - smokey, moist, undressed and served on brown butcher paper (interesting, that's how I like my men). A man vs. meat contest sees your food free if you can eat a $65 meal in one hour with no bathroom breaks. Watching this is nothing short of savage - 2 pounds of meat, a hot and cold side, a cupcake and 32oz drink. Gastronomic gluttony, with an isolation table (waitress supervision) and tin pail provided after one customer achieved the feat in 37 minutes and "lost his brisket" over the table.
