Paul Kirk is co-owner and a Pit Master of National repute; he is also responsible for the rubs at Rub. Hundreds of awards under his gun-belt, he is the "Kansas City Baron of Barbecue". Rub is a significant arrival for Manhattan BBQ fans - a message from the BBQ Gods. Homesick Houstonians and displaced denizens of Memphis are bull-rushing this joint every night. The menu reads like a death warrant - and Pig Pick'n sees a pork butt - duly smoked and BBQued, delivered (or hoisted) to the table with four pairs of silver tongs; presumably four people should agree to eat this. Served with bread slices and pickles, order baked beans on the side, and this meal is what BBQ is all about. Try the deep fried Oreos, your heart health is already shot to hell, so why not finish it off for good.
