This is dinner theatre as open kitchens show young noodle slingers athletically swirling, stretching, slapping and separating yards of dough into springy, tender noodles. How do they do it? There should be a sign warning "do not try this at home". The seafood medley is the priciest meal at $7, and with prices like these it is surprising to find staff apologizing if your meal is not set before you in three minutes flat. Hot meaty, yet delicate broth is transformed to your taste with table garnishes of heady chile oil and fresh cilantro.
