If you are not sufficiently adventurously inclined to attempt chicken which is traditionally not cooked through or freshly prepared tofu in dark miso sauce with seafood, which seems a shame, then stick to noodles and soup. Authentic sojou and sake does find tame Americans imbibing in these potent beverages between bites, soon discovering their sense of adventure.
