Momofuku Noodle Bar is a hot-spot as all Momo's are, with a notable chef (David Chang). Ramen broth here is long simmered with chicken legs (70lbs), slabs of succulent Berkshire pork shoulder and fatty belly, roasted pink pork bones, ham hocks and bacon, so they don't fool around. Top it with fresh snow peas, bamboo shoots, scallions, corn, a delicate sheet of nori and a slow poached egg and you have conspicuously nourishing Japanese street fare, with French flair. Momo Korean stuffed pork buns are also highly renowned, portable, eminently potable and good for any meal.
