From 13th century Mongolia, through, China, Japan and to the Upper East Side of New York; shabu-shabu has traveled a long way through the centuries. Anthropologist will tell you this is a process known as "enculturation" we are telling you it is a delicious process, and Shabu-Shabu 70 is a favorite with locals. Wafer- thin slices of rib eye steak, snow peas, shitake mushrooms, onions, carrots and watercress get the broth to evolve. Dips of rice vinegar, ponzu, soy sauce and sesame or peanut are used for dunking, and the whole process is finished off with a healthy serving of noodles cooked in the remaining broth. The smart money is on the swish-swish, but if this doesn't fill any existing gaps in your teeth or tummy; taste the tempting tempura or sushi menu.
