Step inside Cha’s restaurant and experience traveling back in time. That’s because the first floor of Sinan Lu, a former two-story factory has been redeveloped to look like a circa ‘50 Hong Kong diner decorated with ersatz stained glass, lino-clad booths, vintage drinks coolers and grandma-patterned tableware from old factories in Chaozhou. Cha's is a brilliantly straightforward recreation of the old-time Hong Kong cha canting. Cha cantings are actually the Cantonese version of a diner. Be immersed in total nostalgia as you indulge into some post-war fusion oddities -- instant noodles with luncheon meat, stewed spaghetti, and rice with chicken a la king. These dishes are just dusty sideshow to Cha's excellent, greasy spoon Canto food. They also offer: braised pork belly with preserved vegetable, stir-fried beef, roasted chicken in soy sauce, delicate turnip cake with XO sauce, abalone and chicken rice with mushroom and fish ball soup. The cafeteria ambiance, tiled floor, and simple menu of skillfully recreated classic canto diner sparks curiosity among expats and locals. Don’t ever leave without tasting the crowd-favorite tofu and Cha’s version of the classic macaroni, with spam and soup concoction. Its bright yellow broth and fried, salty spam made the dish oddly comforting, which can be likened to that of the famous Campbell’s chicken soup.
