The multi-awarded restaurant is situated on the 36th floor of the Shangri-La Hotel. Michelin Star awardee Chef Fabrice Giraud has revolutionized traditional French cuisine and added a modern twist to his cooking. Shanghai had its first taste of this particular brand of molecular gastronomy at Jade on 36. Treat your palate to either seafood (Aqua) or meat (Firma) carte du jour. The seafood menu consists of the L’Ormeau (seared abalone with tomato compote and eggplant dressing), Les Moules (mussel soup and vegetables julienne), Darne de Turbot (chicken, capers, potato, and lemon with turbot fish), and Citron (lemon meringue tart that has basil syrup). The meat menu highlights consist of Foie Gras D’oie (goose liver with Muscat jelly, truffles and raspberry dressing), St Germain (yellow pea soup topped with bacon and crouton), Escargots (snails that are pan friend with sweet spices spread on French toast), Boeuf Wagyu – sirloin wagyu beef shallots and vegetables in pepper sauce. For dessert try the Macaroon (tea or coffee with chestnut macaroon and pears poached in vanilla). Delight your sense of taste, smell, and sight with not just the food and ambiance but also the sight of the Bund and relaxing flow of the river.
