Privy 5 Overview
Matsugen may be Jean-Georges Japanese attempt to correct his haute-Chinese failure, but this is not supposed to be a restaurant, it is supposed to be a noodle/sushi/shabu-shabu bar with a nice selection of sake. The kitchen is operated by three noodle maestro's the brothers Matsushita, and the specialty is soba. This is made fresh every day in three different varieties, coarse, medium husk, and no husk; soba is made with buckwheat flour, for those who don't know. Served with duck broth and scallion, the “kamo nanban,” does resemble something from a Tokyo soba shop, and in true Vongerichten style the service is awe inspiring. For an upscale noodle experience, Matsugen is all that and more.
